Just made some yummy lemony cupcakes for my friend’s birthday tomorrow. Try them at home, dead easy to make and this is my first go at icing!

Cupcakes: 125g butter (room temperature), 125g caster sugar, zest of half a lemon, 2 eggs, 150 plain flour & 1/4 tsp baking powder

Icing: 75g soft butter, 125g icing sugar, zest of half a lemon and 2tsp of lemon juice

Pre-heat oven to 180 degrees, whisk butter in bowl until soft, add sugar and beat. Add lemon zest, beaten eggs and flour and mix until you get a creamy mix. Divide the mix between 12 paper cases in a baking tray. Bake for 8-12 minutes until golden. Remove and cool on a wire rack. Ice the cakes when they are cold so the icing does not melt. For the icing, whisk soft butter, add icing sugar, zest and lemon juice and whisk some more until you get a creamy consistency. Now fill the mix into a piping bag and get creative. Enjoy!
